Synopsis
This one-stop, all-purpose cookbook is perfect for anyone who is cooking for diabetes. Without compromising flavor, recipes have been tailored to fit within the often-daunting nutritional parameters of a carbohydrate-conscious diet, paying special attention to fat, sodium, and calories. This collection of recipes will show that you don't have to give up the foods you love, while also encouraging home cooks to branch out and try new ingredients, plus learn some innovative techniques and strategies. Here at America's Test Kitchen we have developed recipes for books focusing on many different dietary needs. Our mission this time around was no different, though perhaps more urgent given that 30 million Americans suffer from diabetes. Those with diabetes or those cooking for loved ones with diabetes know the hurdles that come with this diet. We believed that we could help by compiling a large and varied collection of recipes, all meticulously developed and tested to fit the diet. Lackluster flavor was not an option despite the challenges. We rigorously tested with an eye to getting great flavor while minimizing carbs, added sugar, sodium, and saturated fat. To make fluffy biscuits lower in saturated fat, we replace a portion of the traditional butter or shortening with reduced-fat cream cheese. For a satisfying breakfast hash, we swap regular spuds for sweet potatoes and bulk it up with kale, before topping with eggs for a protein boost. The resulting collection of recipes will set a new bar for great flavor and results that will leave everyone at the table satisfied.
